Paneer and Tomato Quiche

  • 2 Sheets Rolled Puff Pastry

  • 8 Eggs

  • 180g Paneer

  • 1 Medium Sized Brown Onion

  • 60g Green Tomato Chutney – This can be substituted for a seasonal chutney or relish of your choice.

  • Pinch of Salt

  1. Preheat oven to 180°C Fanbake.

  2. Grease a muffin tin with oil spay or butter to avoid the pastry sticking.

  3. Cut rings or squares of puff pastry which are slightly larger than your muffin tin holes and press into the base and up the sides.

  4. Finely dice the onion before placing on pastry at the bottom of the muffin trays.

  5. Cut Moodew paneer into small cubes and place on top of onions.

  6. Crack eggs into a bowl and mix well. Season with a pinch of salt then evenly distribute mixture between quiche cases.

  7. Place muffin trays in preheated oven and bake for 20 minutes or until golden.

  8. Remove from oven and allow to rest for 5 minutes before removing quiches from the tin.

  9. Enjoy hot or allow to cool.
